I look at four things. The actual time spent at the castle (between 1 and 1.5 hours depending on the tour, which is enough—see how long the visit lasts). What’s included: the castle ticket is part of three tours, not the others, and the page tickets and what’s included details this. Group size, because an eight-seater van and a coach don’t feel the same in the streets of Riquewihr. And what people write afterward, especially those who were disappointed: their comments are similar across tours, almost always “I thought there would be a guide.”
